If you have not yet fallen for greek yogurt, I give you one more compelling reason to give it a try.
Greek Yogurt Pancakes via Macheesmo
We doubled the recipe thinking it wouldn't make many, but the double recipe made enough for 6 people + leftovers. They are light, slightly tangy, and very delicious. They don't require butter like most recipes so I'm going to call them a health food.
- 1/2 Cup all-purpose flour
- 1 Tablespoon sugar
- 1 Teaspoon baking soda
- 1/2 Teaspoon salt
- 1 Cup Greek Yogurt
- 2 Large eggs
- 1/2 Teaspoon vanilla extract
- 2 Tablespoons milk
To start, mix your baking soda, flour, sugar, and salt in a bowl and then add your Greek yogurt. Next add all your liquid ingredients and whisk away. It should be a pretty smooth batter. Cook + enjoy!

oh my! the other day i didn't have all the ingredients for my buttermilk pancakes...so I just substituted greek yogurt + a little milk (in place of the buttermilk). they were so yummy! i think i should try this recipe too.
